Ingredients
For the Peanuts
- 1 cup Peanuts groundnuts, peanuts
For the Jaggery Syrup
- 1 cup Jaggery also known as gud
- 1 tablespoon Clarified Butter for greasing
Instructions
Prepare the Peanuts
- Roast the groundnuts in a dry pan over medium heat, stirring frequently, until fragrant and lightly browned. Remove from heat and let cool completely. Once cool, remove any skins by rubbing the peanuts together in a clean kitchen towel.
Make the Jaggery Syrup
- In a heavy-bottomed pan or wok, melt the jaggery over low heat, stirring constantly to prevent burning. Continue stirring until the jaggery melts completely and forms a smooth syrup. This may take 10-15 minutes.
Combine and Spread
- Add the roasted peanuts to the melted jaggery syrup and stir well to coat evenly. Grease a flat plate or tray lightly with ghee.
Set and Cut
- Pour the mixture onto the prepared plate and spread it out evenly to about ΒΌ inch thickness. Let it cool and harden completely (at least 30 minutes). Once firm, break the chikki into desired sized pieces.
