Ingredients
For the Dough
- ½ cup Bajra Flour
- ½ cup Whole Wheat Flour whole
For the Filling
- 1 cup Vegetables (e.g., beans), cabbage, carrots, mixed, peas
- 1 Tbsp Garlic chopped
- 2 Tbsp Onion chopped
- 1 Tbsp Sesame Oil
- 1 Tbsp Soy Sauce
- 1 Tbsp Fruit Vinegar
- 1 ½ tsp Salt or to taste
Instructions
- In a mixing bowl, combine the bajra flour and whole wheat flour. Gradually add water to form a smooth, pliable dough. Kneading well develops the gluten in the wheat flour, which gives the momos their structure. Cover the dough and let it rest for 20 minutes. This allows the gluten to relax, making the dough easier to work with.
- While the dough rests, prepare the filling. Heat the sesame oil in a pan over medium heat. Add the chopped garlic and onion. Sauté until the onions are translucent and fragrant.
- Add the mixed vegetables to the pan. Stir-fry for a few minutes until slightly softened. Season with soy sauce, fruit vinegar, and salt. Mix well and cook for another minute. Remove from heat and set aside to cool.
- On a lightly floured surface, roll out small circles of the dough. Place a spoonful of the cooled vegetable filling in the center of each circle. Fold the dough over to create a half-moon shape, pinching the edges firmly to seal. Crimping the edges creates a decorative finish and helps prevent the filling from leaking out during steaming.
- Steam the momos in a steamer basket or idli mold for about 15 minutes, or until they are cooked through. Steaming ensures the momos are light and fluffy. Serve hot with your favorite dipping sauce.
Recipe Notes
Good To Know
- To prevent bajra momos from becoming too dense or dry, knead the dough well and let it rest covered for at least 20-30 minutes. This relaxes the gluten in wheat flour and helps hydrate the bajra, resulting in softer dumplings.
- If you find the dough difficult to roll out or prone to cracking, add a teaspoon of oil while kneading, and use a damp kitchen towel to cover the dough balls while assembling the momos to retain moisture.
- Enhance the filling by adding finely chopped greens like spinach or grated carrots for extra nutrition and color, or toss in a handful of crumbled paneer for a protein boost.
- For a gluten-free version, omit the wheat flour and substitute with more bajra flour and a small amount of tapioca or potato starch to improve pliability and binding; handle the dough gently as it will be more delicate.
Expert Tips
- For perfectly shaped momos, use a small, thin-edged circular cutter to create uniform dough wrappers. This will also ensure they cook evenly.
- Steam the momos in a steamer lined with parchment paper or lightly oiled to prevent sticking. Alternatively, you can lightly pan-fry or deep-fry them after steaming for a crispier texture.
- Serve your bajra momos with a vibrant dipping sauce. A spicy tomato chutney, a tangy cilantro-mint chutney, or a savory peanut sauce are all excellent choices.
Storage Instructions
- Leftover bajra momos can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them gently in a steamer or microwave until heated through.
