Prepare the Dough

  • Combine all-purpose flour and 1/2 teaspoon of salt in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Add 1 tablespoon of oil, knead it in, and let the dough rest, covered with a damp cloth, for at least 20 minutes.

Make the Filling

  • Heat butter in a pan over medium heat. Add ginger-garlic paste and sauté for 20 seconds. Add finely chopped onions and cook for a minute. Add green beans and grated carrots, cook for 2 minutes. Stir in grated cabbage and cook for another minute until slightly softened. Season with salt and black pepper. Remove from heat and let cool completely.

Assemble the Momos

  • Divide the dough into small balls. Roll each ball into a thin circle (about 3-4 inches in diameter). Place a spoonful of filling in the center. Fold the dough over the filling to create a half-moon shape, pleating the edges to seal. Repeat with remaining dough and filling.

Steam the Momos

  • Fill a large pot with water and bring to a boil. Grease a steamer basket with oil. Arrange the momos in the steamer, ensuring they are not overcrowded. Place the steamer basket over the boiling water, cover, and steam for 13-14 minutes, or until the momos are cooked through and the dough is translucent.

Serve

  • Carefully remove the momos from the steamer and let them cool slightly before serving hot with your favorite chutney.

  • For extra flavor in the filling, add a pinch of garam masala or chili flakes.
