For the Kheer

Prepare the Almonds

  • Soak 10 almonds in warm water for 30 minutes. Peel and grind to a coarse paste.

Roast the Vermicelli and Nuts

  • Heat 1 teaspoon of ghee in a pan. Roast the finger millet vermicelli until lightly golden. Set aside.
  • Heat another teaspoon of ghee. Fry the cashews and raisins until lightly browned. Set aside.

Cook the Kheer

  • Boil 1 cup of milk in a saucepan. Add the roasted finger millet vermicelli and simmer for 4-5 minutes, stirring occasionally, until the vermicelli is tender.
  • Stir in the almond paste and cook for 2 minutes over low heat.
  • Add the organic sugar and stir until completely dissolved.

Finish and Serve

  • Remove from heat. Stir in the cardamom powder, milk powder (if using), and the fried cashews and raisins.
  • Gently stir in a few saffron strands (if using).
  • Pour into serving bowls and garnish as desired. Serve warm or chilled.
