Ingredients
For the Kheer
- 1/2 cup Finger Millet Vermicelli also known as ragi vermicelli
- 1 cup Milk whole milk recommended for creaminess
- 1/2 cup Sugar organic
- 1 tsp Cardamom freshly ground is best
- 2 tbsp Cashews
- 2 tbsp Raisins
- 10 Almonds
- 3 tsp Milk Powder adds creaminess. can substitute with almond flour., optional
- 2 tsp Clarified Butter use as needed for roasting
- Few strands Saffron for garnish and color, optional
Optional additions
- 1/4 tsp Rose Water for added fragrance
Instructions
Prepare the Almonds
- Soak 10 almonds in warm water for 30 minutes. Peel and grind to a coarse paste.
Roast the Vermicelli and Nuts
- Heat 1 teaspoon of ghee in a pan. Roast the finger millet vermicelli until lightly golden. Set aside.
- Heat another teaspoon of ghee. Fry the cashews and raisins until lightly browned. Set aside.
Cook the Kheer
- Boil 1 cup of milk in a saucepan. Add the roasted finger millet vermicelli and simmer for 4-5 minutes, stirring occasionally, until the vermicelli is tender.
- Stir in the almond paste and cook for 2 minutes over low heat.
- Add the organic sugar and stir until completely dissolved.
Finish and Serve
- Remove from heat. Stir in the cardamom powder, milk powder (if using), and the fried cashews and raisins.
- Gently stir in a few saffron strands (if using).
- Pour into serving bowls and garnish as desired. Serve warm or chilled.
