Instructions

Prepare the Batter

  • Combine the ragi flour and salt in a large bowl. Create a well in the center.
  • Gradually add water to the well, mixing with your fingers until a soft, slightly crumbly dough forms. The consistency should be similar to thick pancake batter.
  • Add the grated coconut and mix well to combine.

Steam the Puttu

  • Lightly grease your steamer or puttu maker. Transfer the batter into the steamer.
  • Steam for 20-25 minutes, or until the puttu is cooked through and firm to the touch. Cooking time may vary depending on your steamer.

Serve

  • Carefully remove the steamed puttu from the steamer. Serve warm. Enjoy with a sprinkle of sugar, jaggery, or your favorite chutney.

Recipe Notes

Expert Tips for Perfect Ragi Puttu

  • Freshly grated coconut is key: Pre-grated coconut can be drier and affect the texture.
  • Don't overmix the batter: Overmixing can make the puttu tough. Mix just until the ingredients are combined.
  • Adjust water as needed: The amount of water needed may vary slightly depending on the type of ragi flour used.
  • Get creative with toppings: Experiment with different toppings like coconut chutney, sugar, jaggery, or even fruit.
