Ingredients
Dry Ingredients
- 200 gm Ragi Flour finger millet flour
- 1 tsp Mustard Seeds rai
- 1 tsp Lentils black, split black lentils
- 1 tsp Chickpea split chickpeas
- 1/4 tsp Asafoetida hing, optional
Wet Ingredients
- 2 cup Buttermilk or 2 cups beaten curd diluted with water
Vegetables
- 1 tbsp Chili Pepper finely chopped, green
- 1/2 medium Onion finely chopped
- 1 medium Carrot grated
Instructions
Prepare the Batter
- Mix ragi flour, buttermilk, and salt in a bowl. The batter should be slightly thicker than pancake batter but pourable.
Sauté the Spices and Vegetables
- Heat oil in a pan. Add mustard seeds, urad dal, chana dal, and asafoetida (if using). Once the seeds splutter, add finely chopped onions and green chilies. Sauté for a minute.
Add Remaining Vegetables and Ragi Batter
- Add the grated carrots, and stir for another minute. Reduce the heat to low. Pour in the ragi batter, stirring continuously to prevent sticking.
Cook the Ragi Mixture
- Continue stirring for 10-15 minutes until the mixture thickens and pulls away from the sides of the pan. Stir for another 2 minutes.
Set and Serve
- Lightly grease a baking sheet or plate. Pour the cooked mixture onto the sheet and spread evenly. Let it cool completely before cutting into bars. Garnish with fresh grated coconut (optional).
