  • 1/4 cup Palm Sugar powdered; adjust to your desired sweetness

Prepare the Dry Ingredients

  • Sift together the finger millet flour, whole wheat flour, and cornstarch. Set aside.

Cream Butter and Sugar

  • Cream together the softened butter and palm sugar until light and fluffy. This is best done with an electric mixer.

Add Flavor

  • Mix in the cardamom powder.

Combine Wet and Dry Ingredients

  • Gently fold the sifted dry ingredients into the creamed butter mixture using a spatula. Do not overmix; just combine until no dry ingredients remain.

Chill the Dough

  • Wrap the cookie dough tightly in plastic wrap and refrigerate for at least 30 minutes, or up to 1 hour. This will help prevent the cookies from spreading too much during baking.

Preheat Oven and Prepare Baking Sheet

  • Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.

Shape and Bake Cookies

  • Roll the chilled dough into small balls (about 1 inch in diameter). Gently flatten each ball slightly with a fork or your fingers. Optionally, use cookie cutters for a more defined shape. Sprinkle with chopped almonds.

Bake the Cookies
