Ingredients
For the Bottle Gourd Brownies
- 2 cup Bottle Gourd, grated
- 1 cup Peanut Butter
- ⅓ cup Honey
- 2 Tbsp Cocoa Powder
- 1 tsp Vanilla Extract
- ½ tsp Cinnamon ground
- ½ tsp Baking Soda
- ¼ tsp Salt
- 1 Tbsp Flaxseed Meal
- 3 Tbsp Water
- ½ cup Whole Wheat Flour whole
For the Walnut Chocolate Ice Cream
- 1 cup Heavy Cream
- 150 gm Milk Chocolate, chopped
- ¼ cup Milk
- ½ cup Walnuts
Instructions
Make the Brownies
- Preheat oven to 350°F (175°C). Lightly grease a square 8x8 inch baking pan. This ensures the brownies won't stick.
- In a small bowl, combine the flaxseed meal and water. Set aside to thicken. This mixture acts as a binding agent, replacing eggs.
- In a large bowl, combine the grated bottle gourd, peanut butter, honey, cocoa powder, vanilla extract, and cinnamon. Mix until well combined.
- In a separate bowl, whisk together the whole wheat flour, salt, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the brownies cool completely in the pan before refrigerating for at least 2 hours to firm up. Chilling helps the brownies set and makes them easier to cut.
Make the Walnut Chocolate Ice Cream
- In a food processor, grind the walnuts until they form a smooth paste. Set aside.
- In a small saucepan, combine the chopped milk chocolate and milk. Heat over low heat, stirring constantly, until the chocolate is melted and smooth.
- In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form. Be careful not to overwhip.
- Gently fold the walnut paste and melted chocolate mixture into the whipped cream until just combined.
- Pour the ice cream mixture into a freezer-safe container, cover, and freeze for at least 4-6 hours, or until firm.
Assemble the Brownie Sandwiches
- Once the brownies are chilled, cut them into desired shapes for the sandwiches.
- Spread a generous layer of walnut chocolate ice cream onto one brownie. Top with another brownie to create a sandwich.
- Wrap each sandwich tightly in plastic wrap and freeze for at least 30 minutes to allow the ice cream to harden.
- Use a warm knife to cut the sandwiches cleanly. Serve immediately and enjoy!
Recipe Notes
Good To Know
- To make brownies more fudgy, add about 50 grams of melted chocolate.
- For fudgier brownies, omit the baking soda.
Expert Tips
- Use high-quality cocoa powder for a richer chocolate flavor.
- Don't overmix the batter, as this can lead to tough brownies. Mix until just combined.
- Line your baking pan with parchment paper, leaving an overhang on the sides. This makes it easy to lift the brownies out of the pan for cooling and slicing.
Storage Instructions
- Store leftover brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
