Ingredients
For the Brownies:
- 100 gm Butter softened, unsalted
- 100 gm Sugar granulated
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 150 gm All-Purpose Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 50 gm Cocoa Powder unsweetened
- 1 tsp Coffee Powder nescafé, e.g., instant
- 1 cup Sweetened Milk condensed
- 1/2 cup Walnuts chopped
For the Ice Cream:
- 100 ml Heavy Cream
- 100 gm Sugar also known as icing sugar, powdered
- 1 tsp Vanilla Extract
Instructions
Prepare the Brownies
- Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and instant coffee powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the sweetened condensed milk and chopped walnuts.
- Pour the batter into a greased and floured 8x8 inch baking pan. Bake at 350°F (175°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the brownies cool completely before assembling the ice cream sandwiches.
Make the Ice Cream
- In a chilled bowl, beat the heavy cream with an electric mixer until soft peaks form.
- Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
- Transfer the ice cream to an airtight container and freeze for at least 5 hours, or until solid.
Assemble the Ice Cream Sandwiches
- Once the brownies and ice cream are ready, cut the cooled brownies into squares or rectangles.
- Scoop a generous amount of ice cream onto one brownie square. Top with another brownie square to create a sandwich.
- Garnish with extra chopped walnuts, if desired. Freeze for 15-30 minutes before serving to allow the ice cream to firm up slightly.
Recipe Notes
Expert Tips
- For extra-intense coffee flavor, use strong brewed coffee instead of instant coffee powder in the brownie batter.
- To prevent the ice cream from becoming too hard, let the sandwiches sit at room temperature for a few minutes before serving.
- Get creative with your garnishes! Try adding chocolate shavings, sprinkles, or other nuts.
- If you don't have heavy cream, you can substitute with full-fat coconut cream for a vegan version (adjust sweetness as needed).
