Prepare the Flax Egg

  • Mix 1 tablespoon of flaxseed meal with 3 tablespoons of water. Set aside for 10-15 minutes to thicken.

Melt the Chocolate

  • Melt 0.25 cup of finely chopped white chocolate with 1 teaspoon of coconut oil using a double boiler method. Let cool slightly.

Combine Dry Ingredients

  • Whisk together the whole wheat flour, almond flour, baking powder, and salt in a medium bowl. Set aside.

Combine Wet Ingredients

  • In a separate large bowl, whisk together the coconut sugar and coconut milk until the sugar dissolves. Add the flax egg and mix gently.

Combine Wet and Dry Ingredients

  • Add the melted white chocolate and olive oil to the wet ingredients. Gently fold in the dry ingredients and desiccated coconut until just combined. Do not overmix.

Preheat Oven and Prepare Pan

  • Preheat oven to 350°F (180°C). Grease a donut pan well.

Fill Donut Pan

  • Transfer the batter to a zip-top bag. Snip a small corner and fill each donut cavity about ¾ full.

Bake the Donuts

  • Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely in the pan.

Make the White Chocolate Glaze

  • In a heatproof bowl set over a pan of simmering water (double boiler), melt the white chocolate chips, coconut oil, and coconut milk until smooth and pourable.

Glaze and Serve

  • Once the donuts are completely cool, dip each donut in the glaze, allowing excess to drip off. Let the glaze set completely before serving.
