Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour whole
- 1/8 cup Cocoa Powder
- 1 tbsp Corn Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Wet Ingredients
- 1 tbsp Flaxseed Meal
- 1/2 cup Milk
- 1/8 cup Beetroot Juice freshly squeezed
- 1/3 cup Coconut Sugar
- 3/4 tsp Vanilla Extract
- 3 tbsp Olive Oil
- 1 tsp Apple Cider Vinegar
Beetroot & Glaze
- 1/2 cup Beetroot finely grated
- 3 tbsp Beetroot Juice plus additional if needed for glaze consistency, reserved from grated beetroot
- 1 cup Sugar also known as icing sugar, powdered
- 1/2 cup Chocolate Chips for decoration, or sprinkles
Instructions
Prepare the Donuts
- Grease a donut pan thoroughly with olive oil.
- Sift together the whole wheat flour, cocoa powder, cornstarch, baking powder, baking soda, and salt in a large bowl.
- Grate one medium-sized beetroot. Squeeze out the juice and set aside; you'll need about 1/8 cup, reserving the rest for the glaze.
- In a separate bowl, whisk together the milk, coconut sugar, and beetroot juice until the sugar dissolves.
- Add the flaxseed meal, vanilla extract, and olive oil to the wet ingredients. Whisk until well combined.
- Stir in the apple cider vinegar.
- Add the grated beetroot to the wet ingredients.
- Gently fold in the dry ingredients until just combined; do not overmix.
- Preheat oven to 320°F (160°C).
- Transfer the batter to a piping bag or a zip-top bag with a corner snipped off.
- Pipe the batter into the prepared donut pan, filling each cavity about ¾ full.
- Bake for 10-15 minutes, or until a toothpick inserted into the center comes out clean.
- Let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Make the Beetroot Glaze
- In a small bowl, whisk together the reserved beetroot juice and powdered sugar until smooth. Add more beetroot juice, 1 teaspoon at a time, if needed to reach desired consistency.
Decorate & Serve
- Once the donuts are completely cool, dip them into the beetroot glaze, ensuring they are fully coated.
- Gently place the glazed donuts back onto the wire rack to allow the glaze to set.
