Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1/2 cup Corn Flour
- 1/4 cup Sugar granulated
- 1 tsp Salt
Wet Ingredients
Glaze Ingredients
- 1/2 cup Sugar for vanilla glaze, powdered
- 1 tsp Vanilla Extract for vanilla glaze
- 2 tbsp Milk for vanilla glaze; add more as needed for consistency
- 1 cup Sugar for chocolate glaze, powdered
- 2 tbsp Cocoa Powder for chocolate glaze
- 2.5 tbsp Milk for chocolate glaze; add more as needed for consistency
- 1 tsp Vanilla Extract for chocolate glaze
- 2 tbsp Butter melted, for brushing, unsalted
Instructions
Combine Dry Ingredients
- Combine whole wheat flour, corn flour, sugar, and salt in a large bowl.
Combine Wet Ingredients
- In a separate bowl, gently warm the milk and melted butter until the butter is melted. Ensure the milk is lukewarm, not hot, to avoid killing the yeast.
Make the Dough
- Add the warm milk mixture to the dry ingredients. Mix well. Gradually add warm water, mixing until a soft, smooth dough forms. Knead the dough by hand for 10-12 minutes (or 6-8 minutes with a stand mixer) until very soft and elastic.
First Rise
- Lightly oil a large bowl. Place the dough in the bowl, cover, and let rise in a warm place until doubled in size (about 1.5-2 hours).
Shape the Doughnuts
- Punch down the dough to release air. Roll it out to about 1/2 inch thickness. Use a round cookie cutter (or a glass) to cut out doughnuts. Use a smaller cutter or bottle cap to make the holes.
Second Rise
- Place the doughnuts on a parchment-lined baking sheet. Brush the tops with melted butter. Let rest for 15-20 minutes.
Bake the Doughnuts
- Preheat oven to 350°F (180°C). Bake for 12-15 minutes, or until golden brown.

- While the doughnuts are baking, prepare the glazes. For the vanilla glaze, whisk together powdered sugar, vanilla extract, and milk until smooth. Add more milk if needed to reach desired consistency. For the chocolate glaze, whisk together powdered sugar, cocoa powder, vanilla extract, and milk until smooth. Add more milk if needed.
Glaze and Serve
- Once the doughnuts are cool enough to handle, dip them in the glazes. Add sprinkles if desired. Serve immediately and enjoy!
