  • In a bowl, combine the yeast, honey, and lukewarm water. Set aside until the yeast is foamy. This activates the yeast and ensures a good rise for the buns.

  • In a separate bowl, dissolve the flax seeds in 2 tablespoons of lukewarm water. Let it sit for 5 minutes to create a flax egg, which will help bind the dough.
  • In a large mixing bowl, whisk together the whole wheat flour, wheat bran, and salt. Add the yeast mixture and flax seed mixture to the dry ingredients.
  • Gradually add the remaining water, kneading the dough until it becomes soft and smooth. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size. This usually takes about 1-2 hours.
  • Once the dough has doubled, punch it down to release the air. Divide the dough into four equal portions.
  • On a lightly floured surface, roll each portion into a circular disc. These will be your burger buns.
  • Spread 1 teaspoon of mayonnaise on each bun. Top with a grilled Aloo Tikki cutlet and a cheese slice.

  • Place the assembled burgers on a greased baking tray. Brush the tops of the buns with milk and sprinkle with sesame seeds, if desired.

  • Bake for 25-30 minutes, or until the buns are golden brown and the cheese is melted and bubbly.
