Ingredients

- 1 cup Almond blanched, slivered or whole
- 1 teaspoon Cinnamon ground
- 1 teaspoon Baking Powder
- 1/2 cup packed Coconut Sugar lyva organic or similar

Prepare the Almond Mixture
- Grind almonds and cinnamon into a fine paste using a food processor or blender.
Combine Dry Ingredients
- In a bowl, combine the almond-cinnamon paste, coconut sugar, and baking powder. Mix thoroughly.
Incorporate Wet Ingredients
- Add egg whites and softened butter to the dry mixture. Stir until well combined.
Adjust Consistency
- If the mixture is too thick, gradually add milk (or milk alternative), stirring until you achieve a cookie dough consistency – neither too thick nor too runny.
Prepare for Baking
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or grease lightly with butter.
Bake the Cookies
- Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie. Bake for 12-15 minutes, or until the edges are lightly golden brown. Keep an eye on them to prevent burning.
Cool and Garnish
