About Healthy Almond & Coconut Sugar Cookies

Inspired by the BellyNirvana program and a recent delivery of delicious coconut sugar from GoIndiaOrganic, I created these delightful almond cookies. This recipe replaces refined sugar with coconut sugar, offering a healthier, naturally sweetened treat without compromising on taste.
These bakery-style cookies combine the nutty richness of almonds, a warm touch of cinnamon, and the subtle caramel notes of coconut sugar. Light and airy thanks to egg whites, they're the perfect mindful snack – proving that healthy eating can be incredibly satisfying.
Perfect for anyone looking for a delicious and wholesome alternative to traditional cookies, this recipe is easy to follow and delivers exceptional results.

Instructions

Prepare the Almond Mixture

  • Grind almonds and cinnamon into a fine paste using a food processor or blender.

Combine Dry Ingredients

  • In a bowl, combine the almond-cinnamon paste, coconut sugar, and baking powder. Mix thoroughly.

Incorporate Wet Ingredients

  • Add egg whites and softened butter to the dry mixture. Stir until well combined.

Adjust Consistency

  • If the mixture is too thick, gradually add milk (or milk alternative), stirring until you achieve a cookie dough consistency – neither too thick nor too runny.

Prepare for Baking

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or grease lightly with butter.

Bake the Cookies

  • Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie. Bake for 12-15 minutes, or until the edges are lightly golden brown. Keep an eye on them to prevent burning.

Cool and Garnish

  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cool, dust with powdered sugar and garnish with chopped pistachios (optional).

Recipe Notes

Expert Tips

  • For extra flavor, toast the almonds before grinding them. This will enhance their nutty aroma and taste.
  • If you prefer a chewier cookie, reduce the baking time slightly. For crispier cookies, bake for a longer time.
  • Experiment with different spices! Adding a pinch of cardamom or nutmeg can create unique flavor profiles.
  • Store your cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
