  • 70 gm Coconut Sugar alternatively, use light brown sugar
  • 1 Large Egg or 4 tbsp milk for a vegan option
  • 50 gm Chocolate melted; you can substitute with semi-sweet chocolate, dark

Prepare the Dough

  • Cream together the softened butter and coconut sugar until light and fluffy. Beat in the egg (or milk) until well combined. Stir in the melted dark chocolate.

Combine Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, instant coffee powder, baking soda, and salt.

Mix Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Shape and Bake

  • Preheat your oven to 180°C (350°F). If using a cookie press, fill it with the dough and pipe onto baking sheets. If not using a cookie press, roll the dough into balls and place them on baking sheets lined with parchment paper. Decorate with chocolate chips (optional).
  • Bake for 12-15 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
