Instructions

Prepare the Green Gram

  • Coarsely grind the fresh green gram in a grinder. Heat the ghee in a pan and fry the urad dal vadas until golden brown. Add the ground green gram to the same pan and fry until it turns a light golden color. Set aside.

Sauté Aromatics and Spices

  • Heat oil in a heavy-bottomed pan. Add cumin seeds and let them splutter. Add asafoetida (if using), followed by the onion paste and ginger-garlic paste. Sauté until fragrant.

Build the Flavor

  • Add red chili powder, coriander powder, turmeric powder, and salt. Stir well and cook for a minute. Add tomato puree and cook until the oil separates from the masala (spice mixture).

Combine and Simmer

  • Add the roasted green gram and fried urad dal vadas to the pan. Pour in 2 cups of water. Bring to a simmer, cover, and cook for 10-15 minutes, or until the green gram is tender and the sauce has thickened to your desired consistency.

Garnish and Serve

  • Garnish with fresh coriander leaves and serve hot with boiled rice.
