Ingredients
Green Gram and Vadas
- 250 gm Mung Bean fresh, green, mung beans, split green gram may be substituted if fresh is unavailable.
- 1/2 cup Urad Dal Vada lentil fritters, these can be homemade or store-bought.
Spices and Aromatics
- 2 tbsp Onion paste
- 1 tbsp Ginger-Garlic Paste
- 1 tsp Turmeric powder
- 2 tsp Chili Powder adjust to your spice preference., red
- 1 tbsp Coriander powder
- 1/2 tsp Asafoetida adds a unique flavor., hing, optional
- 1 tsp Cumin seeds
- Salt to taste
Other Ingredients
- 1/2 cup Tomato Puree
- 2 tbsp Oil vegetable or any neutral oil
- 1 tbsp Clarified Butter adds richness; can be omitted.
- 1 tbsp Coriander for garnish
- 2 cup Water may need slight adjustment
Instructions
Prepare the Green Gram
- Coarsely grind the fresh green gram in a grinder. Heat the ghee in a pan and fry the urad dal vadas until golden brown. Add the ground green gram to the same pan and fry until it turns a light golden color. Set aside.
Sauté Aromatics and Spices
- Heat oil in a heavy-bottomed pan. Add cumin seeds and let them splutter. Add asafoetida (if using), followed by the onion paste and ginger-garlic paste. Sauté until fragrant.
Build the Flavor
- Add red chili powder, coriander powder, turmeric powder, and salt. Stir well and cook for a minute. Add tomato puree and cook until the oil separates from the masala (spice mixture).
Combine and Simmer
- Add the roasted green gram and fried urad dal vadas to the pan. Pour in 2 cups of water. Bring to a simmer, cover, and cook for 10-15 minutes, or until the green gram is tender and the sauce has thickened to your desired consistency.
Garnish and Serve
- Garnish with fresh coriander leaves and serve hot with boiled rice.
