  • 1/2 cup Yogurt plain; also known as curd
  • 2 leaves Bay Leaves fresh or dried
  • 2 tbsp Oil vegetable or any preferred oil
  • 2 tbsp Ghee clarified butter; optional but recommended

Instructions
 

Prepare the Green Pea Paste

  • Puree the green peas until smooth. Set aside.

Sauté Aromatics

  • Heat oil in a pan. Add bay leaves, onion paste, ginger paste, and garlic paste. Sauté until lightly browned.

Blend Spices and Curd

  • Stir in turmeric powder, cumin seeds, coriander powder, red chili powder, and yogurt. Cook, stirring constantly, until the mixture begins to thicken.

Combine and Simmer

  • Add the green pea paste and couscous. Stir well to combine. Reduce heat to low and simmer for 5-7 minutes, or until heated through and the flavors meld.

Finish and Serve

  • Stir in garam masala and ghee. Taste and adjust salt as needed. Serve hot with chapati, paratha, puri, or rice.
