Ingredients

- 1 tsp Ginger Paste
- 1 tbsp Onion Paste
- ½ tsp Cumin Seeds
- 1 tsp Coriander Powder roasted
- 1 tsp Fennel Powder roasted
- ½ tsp Cinnamon ground
- ½ tsp Garam Masala

- 1 cup Carrot boiled and diced
- 1 cup Mushrooms sliced
- 1 tbsp Tomato Paste
- 2 tbsp Oil or ghee
- Salt to taste
Instructions
- Wash the green peas and green chiles. Blend them together into a smooth paste.
- Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. This releases their aroma.
- Add the onion, garlic, and ginger pastes. Sauté for 1-2 minutes until fragrant and lightly golden.
- Stir in the tomato paste and salt. Cook for another minute.
- Add the green pea paste to the pan. Stir well to combine. Pour in 1 cup of water to create the gravy. Bring the mixture to a simmer.
- Add the diced carrots and sliced mushrooms to the curry. Simmering uncovered allows excess water to evaporate and the flavors to concentrate.
- Stir in the roasted coriander powder, roasted fennel powder, cinnamon, and garam masala. These spices add warmth and depth to the curry.
- Continue to simmer for 5-7 minutes, or until the vegetables are tender and the gravy has thickened to your desired consistency. For extra richness, stir in a tablespoon of ghee just before serving.
- Serve hot with rice or roti.
