Ingredients
For the Milk Mixture
- 1 ltr Milk
- 1/2 cup Sugar granulated
- 1 tsp Cardamom Powder elaichi powder
For the Cauliflower Mixture
- 1 Cauliflower finely grated, medium-sized
- 4 tbsp Ghee
- 1/4 tsp Nutmeg freshly grated
For Garnishing
- 2 tbsp Pistachios finely chopped
- 2 tbsp Almonds finely chopped
- 2-3 drops Kewra Water (optional, adds floral aroma)
- 1 sheet Silver Leaf (vark)
Instructions
Prepare the Milk Mixture
- Boil 1 liter of whole milk in a pan until it reduces to a thick, creamy consistency. Stir frequently to prevent burning. Add 1/2 cup sugar and 1 teaspoon cardamom powder. Mix well and remove from heat. Set aside.
Prepare the Cauliflower Mixture
- In a separate pan, heat 4 tablespoons of desi ghee over medium-high heat. Add 1 finely grated cauliflower and sauté until it becomes tender and slightly crunchy. Stir frequently. Add 1/4 teaspoon freshly grated nutmeg and mix well. Remove from heat.
Combine and Set
- Gently combine the cauliflower mixture with the milk mixture in the first pan. Stir to ensure they are well incorporated. Add 2-3 drops of kewra water (if using) and mix. Grease a flat dish with ghee. Pour the mixture into the dish and spread evenly. Refrigerate for at least 2-3 hours, or until firm.
