Prepare the Milk Mixture

  • Boil 1 liter of whole milk in a pan until it reduces to a thick, creamy consistency. Stir frequently to prevent burning. Add 1/2 cup sugar and 1 teaspoon cardamom powder. Mix well and remove from heat. Set aside.

Prepare the Cauliflower Mixture

  • In a separate pan, heat 4 tablespoons of desi ghee over medium-high heat. Add 1 finely grated cauliflower and sauté until it becomes tender and slightly crunchy. Stir frequently. Add 1/4 teaspoon freshly grated nutmeg and mix well. Remove from heat.

Combine and Set

  • Gently combine the cauliflower mixture with the milk mixture in the first pan. Stir to ensure they are well incorporated. Add 2-3 drops of kewra water (if using) and mix. Grease a flat dish with ghee. Pour the mixture into the dish and spread evenly. Refrigerate for at least 2-3 hours, or until firm.

Garnish and Serve

  • Once the barfi has set, garnish with finely chopped pistachios and almonds. Cut into small squares or desired shapes. Serve chilled and garnish with silver leaf (optional).
