Ingredients
 

Mangoes and Aromatics

Spices and Seasoning

  • 4 Chilies adjust quantity to your spice preference., green
  • 1 tsp Chili Powder adjust to taste., red
  • 1.5 tsp Salt adjust to taste.

Sweetener and Other Ingredients

  • 1/2 cup Jaggery adjust to your desired sweetness.
  • 1 tsp Fenugreek Seeds methi dana, optional, adds a slightly bitter and earthy note.
  • 1 Onion finely chopped.
  • 1 pinch Asafoetida hing, optional, adds a pungent aroma.
  • 1/2 cup Water as needed for consistency.

Instructions
 

Prepare the Mangoes

  • Peel and grate the raw mangoes. Set aside.

Temper the Spices

  • Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida (if using) and curry leaves. Saute for a minute.

Sauté Aromatics and Spices

  • Add chopped onions and green chilies. Saute until onions soften. Stir in red chili powder and salt.

Add Mangoes and Jaggery

  • Add the grated mangoes and jaggery to the pan. Stir well to combine.

Simmer and Finish

  • Add water as needed to reach your desired consistency. Simmer for 10-15 minutes, or until the mangoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.

Garnish and Serve

  • If using, stir in fenugreek seeds during the last minute of cooking. Serve hot with roti, chapati, or rice.
