Ingredients
Mangoes and Aromatics
- 2 Mangoes choose firm, kacha aam, raw, unripe mangoes.
- 1 tbsp Oil vegetable or mustard oil works well.
- 5 leaves Curry Leaves kadipatta
- 1 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds jeera
Spices and Seasoning
- 4 Chilies adjust quantity to your spice preference., green
- 1 tsp Chili Powder adjust to taste., red
- 1.5 tsp Salt adjust to taste.
Sweetener and Other Ingredients
- 1/2 cup Jaggery adjust to your desired sweetness.
- 1 tsp Fenugreek Seeds methi dana, optional, adds a slightly bitter and earthy note.
- 1 Onion finely chopped.
- 1 pinch Asafoetida hing, optional, adds a pungent aroma.
- 1/2 cup Water as needed for consistency.
Instructions
Prepare the Mangoes
- Peel and grate the raw mangoes. Set aside.
Temper the Spices
- Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida (if using) and curry leaves. Saute for a minute.
Sauté Aromatics and Spices
- Add chopped onions and green chilies. Saute until onions soften. Stir in red chili powder and salt.
Add Mangoes and Jaggery
- Add the grated mangoes and jaggery to the pan. Stir well to combine.
Simmer and Finish
- Add water as needed to reach your desired consistency. Simmer for 10-15 minutes, or until the mangoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.
Garnish and Serve
- If using, stir in fenugreek seeds during the last minute of cooking. Serve hot with roti, chapati, or rice.
