Prepare the Okra

  • Cut the top and bottom off each okra. Slit each okra lengthwise, but not all the way through.

Prepare the Stuffing

  • In a bowl, combine coriander powder, red chili powder, salt, mustard oil, and Goda Masala. Mix well.

Stuff the Okra

  • Fill the slit in each okra with the spice mixture. For best results, marinate the stuffed okra overnight in the refrigerator.

Make the Gravy

  • In a pan or wok, heat mustard oil. Add cumin seeds and let them splutter.

Cook the Okra

  • In the same pan, whisk together plain yogurt, dahi masala (or raita masala/pickle masala). Add the stuffed okra and stir gently.

Simmer

  • Cover the pan and let it simmer for 15-20 minutes, stirring occasionally, until the okra is tender and the flavors have melded.
