Ingredients
For the Okra
- 500 gm Okra also known as ladyfingers or bhindi
For the Stuffing
- 1 tbsp Coriander Powder
- 1/2 tbsp Chili Powder red
- 1.5 tsp Salt adjust to taste
- 2 tbsp Mustard Oil
- 2 tbsp Goda Masala
For the Gravy
- 2 tbsp Mustard Oil
- 1 tsp Cumin Seeds
- 1 cup Yogurt
- 1 tbsp Dahi Masala Or Raita Masala optional; or use leftover pickle masala
Instructions
Prepare the Okra
- Cut the top and bottom off each okra. Slit each okra lengthwise, but not all the way through.
Prepare the Stuffing
- In a bowl, combine coriander powder, red chili powder, salt, mustard oil, and Goda Masala. Mix well.
Stuff the Okra
- Fill the slit in each okra with the spice mixture. For best results, marinate the stuffed okra overnight in the refrigerator.
Make the Gravy
- In a pan or wok, heat mustard oil. Add cumin seeds and let them splutter.
Cook the Okra
- In the same pan, whisk together plain yogurt, dahi masala (or raita masala/pickle masala). Add the stuffed okra and stir gently.
Simmer
- Cover the pan and let it simmer for 15-20 minutes, stirring occasionally, until the okra is tender and the flavors have melded.
