  • Peel the raw mango and cut it into large cubes.
  • Heat the oil in a pan. Add the panch phoran and whole red chilies.
  • Once the mustard seeds in the panch phoran begin to crackle, add the curry leaves and raw mango cubes.
  • Add the red chili powder and turmeric powder. Mix well to coat the mango.
  • Add a little water to the pan, then cover and cook for 5 minutes to parboil the mango. This helps soften the mango and infuse it with the spices.
  • Remove the lid and gently mash the parboiled mango cubes. Add the sugar and stir to combine.
