Ingredients
 

Dry Ingredients

  • 1 cup Whole Wheat Flour you can substitute with all-purpose flour, but whole wheat adds more fiber., whole
  • 1 tbsp Flax Seeds
  • 1/2 tsp Turmeric Powder also known as haldi
  • 1/2 tsp Chili Powder also known as lal mirch. adjust to your spice preference., red
  • 1 pinch Asafoetida also known as hing. optional, but adds a distinct flavor.
  • 1.5 tsp Salt adjust to taste.

Wet Ingredients

  • 1 bunch Garlic Chives finely chopped. green onions can be substituted.
  • 1 tbsp Cooking Oil vegetable oil, or ghee (clarified butter) can be used.
  • 1/2 cup Water add as needed to achieve a soft, pliable dough.

Instructions
 

Prepare the Dough

  • Combine the whole wheat flour, flax seeds, turmeric powder, red chili powder, asafoetida, and salt in a large bowl. Mix well.
  • Gradually add water while mixing, creating a soft, pliable dough. Add the chopped garlic chives and 1 tablespoon of oil. Knead thoroughly for 5-7 minutes until smooth and elastic. Let the dough rest for at least 20 minutes, covered with a damp cloth.

Roll and Cook the Theplas

  • Lightly dust your work surface with flour. Divide the dough into small, equal-sized balls.
  • Roll each ball into a thin, round flatbread (approximately 6 inches in diameter). If the dough tears, lightly dust with more flour.
  • Heat a griddle or flat tawa over medium-low heat. Place the rolled thepla on the hot surface.
  • Cook for 1-2 minutes per side, or until lightly browned and cooked through. Brush with a little oil or ghee during cooking for added flavor and softness.

Serve

  • Remove the cooked theplas from the griddle. Serve them hot with your favorite accompaniments, such as pickle, chutney, yogurt, or a side salad.

  • For extra flavor, toast the flax seeds lightly in a dry pan before adding them to the dough.
  • If you find the dough too sticky, add a little more flour, a tablespoon at a time, until it's easier to handle.
