Ingredients
For the Tricolor Doughs:
- 1.5 cup Whole Wheat Flour whole
- 1.5 tsp Salt or to taste
- 1/2 cup Beetroot Puree
- 1/4 cup Spinach Puree palak puree
- 2 tbsp Carrot Puree
- 2 tbsp Vegetable Oil
- 1/2 tsp Turmeric Powder optional, for color enhancement in dough
For the Paneer Filling:
- 1 cup Cottage Cheese indian cottage cheese, crumbled
- 1 cup Bell Peppers diced
- 1 cup Onion finely chopped
- 2 tsp Ginger-Garlic Paste
- 1.5 tsp Salt or to taste
- 1 tbsp Vegetable Oil
- 1 tsp Cumin Seeds jeera
- 1 pinch Asafoetida hing, optional
- 1 tbsp Chili Sauce
- 1 tsp Garam Masala
- 1 tsp Chaat Masala
- 1 tbsp Lemon Juice
- 1/4 cup Coriander chopped
For Serving:
- Chutney green
- Mayonnaise
- 1/2 cup Carrot And Radish Salad or your favorite salad
Instructions
Prepare the Doughs
- Combine whole wheat flour, salt, and oil. Divide into three equal portions. Add beetroot puree to one, spinach puree to another, and carrot puree to the third. Knead each portion with water to form smooth doughs. Let rest for at least 30 minutes.
Assemble the Tricolor Tortillas
- Roll out the carrot dough into a large circle. Place the spinach dough on top, wrapping the carrot dough within. Roll out again. Finally, wrap the entire thing with the beetroot dough and roll out one last time. Cut into equal-sized pieces and gently flatten each piece. Cook on a lightly oiled griddle until lightly browned on both sides.
Make the Paneer Filling
- Heat oil in a pan, add cumin seeds and asafoetida (if using). Sauté until fragrant. Add onions and bell peppers, cook until softened. Stir in ginger-garlic paste. Add crumbled paneer, salt, chili sauce, garam masala, and chaat masala. Cook until heated through. Stir in lemon juice and cilantro.
Assemble and Serve
- Spread green chutney on each tricolor tortilla. Add a generous spoonful of the paneer filling. Roll tightly. Drizzle with mayonnaise and serve immediately with your favorite salad.
