Ingredients
Vermicelli & Dairy
- 1/2 cup Vermicelli
- 1 ltr Milk
Fruits & Nuts
- 1 Custard Apple deseeded and pulped, medium-sized
- 1/4 cup Cashews chopped
- 1/4 cup Walnuts chopped
- 2 Apricots fresh or dried, thinly sliced for garnish
- 2 Plums fresh or dried, thinly sliced for garnish
Optional additions
- 1/4 tsp Cardamom Powder for added aroma and flavor
- 1/4 tsp Pistachios chopped, for garnish
Instructions
Prepare the Vermicelli
- Melt ghee in a pan or kadai over medium heat. Add the vermicelli and roast for 1-2 minutes, or until lightly golden brown. Stir frequently to prevent burning.
Cook the Kheer
- Add the full-fat milk to the pan and bring to a gentle simmer. Add the sugar and cardamom powder (if using). Stir well to dissolve the sugar.
Add Custard Apple
- Stir in the pulped custard apple. Reduce the heat to low and let the mixture simmer for 10-15 minutes, or until the vermicelli is cooked through and the kheer has thickened slightly. Stir occasionally to prevent sticking.
Incorporate Nuts
- Stir in the chopped cashews and walnuts. Cook for another 2-3 minutes. Do not overcook the nuts.
Garnish & Serve
- Remove from heat and let the kheer cool slightly. Garnish with thin slices of apricots and plums, and chopped pistachios (if using). Serve chilled or at room temperature.
