Ingredients
Tapioca Pearls
- 1 cup Tapioca Pearl tapioca pearls
- 3 cup Water for soaking
Spices and Aromatics
- 1 tsp Cumin Seeds optional
- 1 Chili adjust to your spice preference, green
Instructions
- Soak the tapioca pearls in 3 cups of water, ensuring they are fully submerged. This hydration step is crucial for achieving a light and fluffy texture.
- After 2 hours, drain the water using a colander or sieve. Leave the pearls in the colander for another 6 hours to further dry and separate.
- The tapioca pearls are ready when they appear fluffy and each pearl is separate.
- Dry roast the peanuts until fragrant. Grind them finely using a mortar and pestle or food processor. Mix the ground peanuts with the prepared tapioca pearls.
- Heat the ghee in a medium-sized pan over medium heat. Add the cumin seeds and let them splutter for a few seconds, releasing their aroma.
- Add the green chili and let it sizzle for a few seconds. This adds a touch of heat to the dish.
- Add the diced boiled potatoes to the pan. Sauté for a few minutes until they are lightly coated in the spiced ghee.
- Add the prepared tapioca pearl mixture to the pan. Stir gently to combine all the ingredients.
- Season with rock salt to taste. Cover the pan and cook for 2 minutes to allow the flavors to meld. Garnish with fresh cilantro and serve hot.
Recipe Notes
Good To Know
- Use good quality tapioca pearls (unbroken) to prevent them from becoming soggy and sticky.
- Soak the tapioca pearls for 2 hours, then drain them thoroughly in a colander.
- For spicy variations, finely chop green chilies instead of splitting them.
- Cumin seeds are optional. Mustard seeds and curry leaves can be added for a South Indian touch.
Expert Tips
- For a creamier texture, lightly roast the tapioca pearls before soaking.
- Adjust the sweetness and spice levels to your preference by adding more or less sugar/chilies.
- Garnish with fresh cilantro or mint for added flavor and visual appeal.
Storage Instructions
- Store leftover tapioca pearls in an airtight container in the refrigerator for up to 2 days.
- Reheat gently on the stovetop or in the microwave, adding a splash of water or milk to prevent sticking.
