Ingredients
For the Sabudana Vada
- 1 cup Tapioca Pearl tapioca pearls
- 2 Potatoes boiled and mashed, medium
- 1/2 cup Peanuts roasted and coarsely ground (mungphali)
- 1 tsp Cumin Seeds lightly roasted, optional
- 2 Chilies finely chopped, green
- 1 tsp Ginger finely chopped
- 2 tsp Lime Juice freshly squeezed
- 2 tbsp Coriander chopped
- 1.5 tsp Sugar adjust to taste
- 3 tbsp Buckwheat Flour for binding, optional
- 1/2 tsp Rock Salt or regular salt to taste
For Frying
- Oil for deep frying
Instructions
Prepare the Sabudana
- Soak 1 cup of sabudana (tapioca pearls) in enough water for at least 5 hours, or preferably overnight, until soft but not mushy. Drain completely.
Mash the Potatoes
- Boil 2 medium potatoes until tender. Peel and mash them thoroughly.
Roast and Grind Peanuts
- In a dry skillet, roast 1/2 cup of peanuts until fragrant and lightly browned. Let cool, then coarsely grind them using a mortar and pestle or a food processor.
Combine Ingredients
- In a large bowl, combine the drained sabudana, mashed potatoes, ground peanuts, cumin seeds (if using), green chilies, ginger, cilantro, lime juice, sugar, buckwheat flour (if using), and sendha namak (rock salt). Mix well to ensure all ingredients are evenly distributed.
Shape the Vadas
- Gently form the mixture into small, flat patties (vadas). Avoid pressing too firmly to maintain a soft interior.
Fry the Vadas
- Heat oil in a deep pan or kadai over medium heat. Carefully add the vadas to the hot oil and fry until golden brown and crispy on both sides. Remove from oil and drain on paper towels.
Serve
- Serve the hot sabudana vadas with yogurt, chutney, or tomato ketchup.
