  • Mash the boiled potatoes thoroughly. Add the Moraiya Khichadi and mix well to combine.
  • Incorporate the Rajgira flour and Moraiya flour gradually, mixing until a soft, pliable dough forms.
  • Add the ginger paste, green chili paste, salt, lemon juice, and sugar. Mix everything together until well combined.

Shape and Fry the Thalipith

  • Divide the dough into equal-sized portions. Roll each portion into a small ball and gently flatten it into a small, round patty (similar to a puri).
  • Heat oil in a shallow pan or skillet over medium heat.
  • Carefully place the Thalipith patties in the hot oil and shallow fry them, flipping them halfway through, until they turn golden brown on both sides.

Serve

  • Remove the fried Thalipith from the pan and drain any excess oil.
  • Serve the Thalipith hot, garnished with grated processed cheese.
