Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour
- 1 cup Whole Wheat Flour whole
- 4 Tbsp Sugar brown
- 1 Tbsp Cinnamon ground
- 1 tsp Active Yeast dry
Wet Ingredients
- 3 Tbsp Butter softened, unsalted
- 1/2 cup Pumpkin Purée
- Water as needed, warm
Filling
- 5 cubes Cream Cheese softened
Milk Wash
- 1/2 cup Milk
Glaze (Optional)
- 2 tsp Butter melted, unsalted
Instructions
- In a large bowl, combine the all-purpose flour, whole wheat flour, brown sugar, cinnamon, and yeast.
- Add the softened butter and pumpkin purée to the dry ingredients. Rub the butter and pumpkin into the flour mixture until well combined.
- Gradually add warm water, mixing until a soft, slightly sticky dough forms. Knead the dough for 5-7 minutes on a lightly floured surface until smooth and elastic. This develops the gluten, resulting in a light and airy bun.
- Place the dough in a greased bowl, turning to coat. Cover the bowl with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
- Punch down the risen dough to release the air. Gently knead for a minute. Divide the dough into 5 equal pieces.
- Flatten each piece of dough and place a cube of softened cream cheese in the center. Wrap the dough around the cream cheese, sealing it completely.
- Use kitchen twine to tie each dough ball, creating a pumpkin-like shape. Tuck the ends of the twine underneath.
- Place the shaped buns on a baking sheet lined with parchment paper. Cover loosely with plastic wrap and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Brush the risen buns with milk wash.
- Bake for 20-25 minutes, or until golden brown. The internal temperature should reach 200°F (93°C).
- Remove from the oven and let cool slightly. Drizzle with melted butter, if desired. Serve warm and enjoy!
