For the Mango Puree

For the Kesari

  • 1/2 cup Semolina suji, or rava, or sooji rava
  • 3 tbsp Ghee clarified butter; desi ghee is preferred but regular ghee works fine.
  • 6 Cashews
  • 1 1/2 cup Water adjust as needed for desired consistency

Instructions
 

Prepare the Mango Puree

  • Peel the ripe mango and cut it into small pieces. Combine the mango pieces, sugar, and cardamom powder in a blender. Blend until you achieve a smooth puree.

Roast the Cashews

  • Heat 1 tablespoon of ghee in a pan over medium heat. Add the cashews and roast until they turn golden brown, stirring frequently to prevent burning. Set aside.

Cook the Semolina

  • Heat the remaining 2 tablespoons of ghee in the same pan. Add the semolina and dry roast for 5-7 minutes, stirring constantly, until it turns light golden brown and fragrant. This step is crucial for the texture.

Add Water and Simmer

  • Gradually add the water to the roasted semolina, stirring continuously to prevent lumps from forming. Bring the mixture to a boil. Reduce heat to low, and simmer until most of the water is absorbed.

Incorporate Mango Puree

  • Stir in the mango puree and continue to cook for another 2-3 minutes, until the mixture thickens to your desired consistency.

Finish and Serve

  • Remove from heat and let the Mango Kesari cool slightly. Garnish with the roasted cashews and serve warm or at room temperature.
