Ingredients
- 1/4 Appam Batter as batter would be verythick laddle
- Batter or water water required make watery textured
- 50 gm Ginger
- 1 Tomato chopped, medium sized
- 2 strands Coriander corriander
- 1.5 leaves Curry Leaves
- 1 spoon Mustard Seeds mustards tb
- Tadka or oil oil for
- 1.5 tsp Salt or as per taste
- Amchoor Powder raw mango 1 tea spoon. aam chur powder
- 1 Jaggery half coin sized for chutney
- 6 Chili red, red chilles
Instructions
Prepare the Ginger Chutney
- Peel and chop the ginger, tomato, and coriander. Combine these with the jaggery, red chilies, aam chur powder, and salt in a blender. Add minimal water and blend to a smooth chutney.
Temper the Chutney
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and sauté briefly. Pour this tempering over the chutney.
Prepare the Appam
- In a bowl, mix the appam batter with water and salt. The consistency should be slightly thinner than the original batter.
Cook the Appam
- Heat a non-stick pan or appam patra. Pour a ladleful of the batter into the center of the hot pan. Spread the batter gently to form a thin circle. Cover and cook until the edges lift and the appam is cooked through. Serve hot with the ginger chutney.

Expert Tips for Perfect Appam and Chutney
- For extra fluffy appams, let the batter ferment for at least 8 hours, or preferably overnight.
- Don't overcrowd the pan when cooking appams. Cook them one at a time for best results.

- If you don't have aam chur powder, you can use a little lime juice to add tartness instead. Freshly squeezed lime juice can also be a great addition.
