Ingredients
For the Yeast Mixture
- 1 tsp Active Yeast dry
- 1 tbsp Sugar granulated
- 1/4 cup Water
For the Bread Dough
- 2 cup All-Purpose Flour also known as maida
- 1 1/2 tsp Salt or to taste
- 2 tbsp Butter softened, unsalted
- 2 tbsp All-Purpose Flour for dusting
- 1/2 cup Water as needed for dough consistency
For the Masala Paste
- 2 tbsp Butter unsalted
- 2 tbsp Garlic finely chopped
- 1 tsp Ginger finely chopped
- 1 tbsp Garam Masala
- 1/2 tsp Chili Powder red
- 1/2 tsp Salt or to taste
For the Topping
- 2 tbsp Butter melted, unsalted
- 1 tsp Chili Flakes red
- 1/4 cup Coriander chopped, cilantro
Instructions
Activate the Yeast
- Combine active dry yeast, sugar, and lukewarm water in a bowl. Cover and let stand for 10 minutes until foamy.
Make the Dough
- In a large bowl, combine all-purpose flour and salt. Add the yeast mixture and enough lukewarm water to form a soft, slightly sticky dough. Knead for 5 minutes until smooth.
Incorporate Butter
- Add softened butter to the dough and knead until smooth and elastic (about 5-7 minutes). Form the dough into a ball, cover with a clean cloth, and let rise in a warm place for 1 hour, or until doubled in size.
Prepare the Masala Paste
- Melt butter in a pan. Add finely chopped garlic and ginger; sauté for 1 minute. Remove from heat and transfer to a blender. Add garam masala, red chili powder, and salt. Blend into a smooth paste.
Combine Dough and Masala
- Lightly flour a clean surface. Place the risen dough on the surface and knead briefly. Add the prepared masala paste and knead thoroughly until evenly distributed.
Shape and Rise Again
- Shape the dough into a long oval, roll it up like a Swiss roll, and pinch the edges to seal. Place the dough roll into a greased rectangular baking tin. Cover and let rise for 30 minutes, or until almost doubled in size.
Bake the Bread
- Preheat oven to 400°F (200°C). Bake the bread for 10 minutes. Reduce oven temperature to 350°F (180°C) and bake for another 20 minutes.
Make the Topping
- In a small bowl, combine melted butter, red chili flakes, and chopped coriander.
Brush and Finish Baking
- Brush the partially baked bread with the butter mixture. Bake for an additional 5 minutes until golden brown.
Cool and Serve
- Remove from oven and let cool slightly in the pan before demolding. Brush the cooled bread with remaining melted butter. Slice and serve warm.
Recipe Notes
Expert Tips for Perfect Masala Bread
- For a richer flavor, use a combination of ghee and butter in the masala paste.
- Adjust the amount of red chili powder to your preferred level of spiciness.
- If your dough is too sticky, add a tablespoon of flour at a time until it becomes manageable.
- Allowing the bread to cool slightly before slicing prevents it from crumbling and ensures cleaner slices.
