Ingredients
For the Preferment (Prepare 1 day ahead)
For the Dough
- 3 cup Flour all-purpose flour, also known as maida
- 2 tsp Salt
- 1 tbsp Sugar
- 1/2 tbsp Garam Masala homemade or store-bought
- 2 tsp Turmeric turmeric powder, also known as haldi
- 1/2 cup Oil refined oil, or unsalted butter
- 1 tbsp Coriander also known as dhania, finely chopped
- 1 tbsp Mint finely chopped, fresh
- 1/2 cup Cheese grated, processed
- 2 tbsp Milk for egg wash
Instructions
Make the Preferment
- Mix all preferment ingredients in a bowl. Add enough warm water to form a sticky dough. Cover and let rise in a warm place until tripled in volume (about 4-6 hours). Refrigerate in an airtight container until ready to use.
Prepare the Dough
- In a large bowl, combine 3 cups of flour, salt, sugar, garam masala, and turmeric powder. Add half of the refrigerated preferment. Mix well. Add lukewarm water gradually until a soft, non-sticky dough forms.
- Cover the bowl and let the dough rise in a warm place until doubled (about 1-1.5 hours).
- Add the oil (or butter) to the risen dough and knead until well incorporated. Knead the dough until smooth and elastic (5-7 minutes).
- Lightly grease a large piece of plastic wrap. Place the dough inside, wrap tightly, and place in a plastic bag. Refrigerate for at least 8 hours, or overnight.
Shape and Bake the Loaf
- The next day, punch down the dough. Let it come to room temperature. Lightly flour your countertop and sprinkle with chopped herbs. Place the dough on the surface and knead gently for 15-20 minutes. Shape the dough into a loaf and place it seam-side down in a greased loaf pan.
- Cover the loaf pan with plastic wrap and let rise for about 1 hour, or until almost doubled.
- Preheat oven to 350°F (180°C).
- Brush the risen loaf with milk. Sprinkle generously with grated cheese.
- Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 20 minutes before transferring it to a wire rack to cool completely.
