Recipe Time & More

Ingredients
For the Yeast Activation
- 1/2 cup Milk lukewarm
- 2 tbsp Sugar
- 2 tsp Active Yeast dry
For the Dough
- 4 cup All-Purpose Flour
- 1/3 cup Milk Powder
- 1 tsp Salt
- 1/2 cup Milk lukewarm
- 2 tbsp Butter softened
For the Egg Wash
- 1 Egg lightly beaten
Instructions
- In a small bowl, combine the lukewarm milk, sugar, and yeast. Gently stir to dissolve. Let stand for 7-8 minutes until foamy. This activates the yeast and ensures a well-risen loaf.
- In a large bowl, whisk together the all-purpose flour, milk powder, and salt.
- Add the yeast mixture and the remaining lukewarm milk to the dry ingredients. Stir until a shaggy dough forms.
- Gradually add the softened butter, kneading the dough for 7-8 minutes until smooth and elastic. The dough may be slightly sticky at first, but it will become less sticky as you knead.
- Place the dough in a greased bowl, turning to coat. Cover with a damp cloth or plastic wrap and let rise in a warm place for 2 hours, or until doubled in size.
- Punch down the dough to release the air. Shape the dough into a loaf and place it in a greased 9x5 inch loaf pan. Cover and let rise for another 45 minutes.
- Preheat oven to 400°F (200°C). Brush the top of the loaf with the beaten egg wash for a golden crust.
- Bake for 40-45 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Recipe Notes
Good To Know
- For a softer, fluffier crumb, incorporate a tangzhong (water roux) by cooking 3 tablespoons of flour with ½ cup of water until thickened, then let it cool and add it to your dough ingredients.
- To achieve a golden, shiny crust, brush the loaf with a mixture of milk and melted butter immediately after baking, then let it cool uncovered for a few minutes before transferring to a rack.
- If you prefer whole wheat bread, substitute up to 50% of the all-purpose flour with whole wheat flour; add an extra tablespoon of milk to counteract the drier texture.
- Allow the bread to cool completely before slicing to prevent squashing the crumb; for perfectly even slices, use a serrated bread knife or a bread slicer guide.
Expert Tips
- Use high-quality bread flour for the best gluten development and rise.
- Don't overknead the dough, as this can lead to a tough crumb. Knead just until smooth and elastic.
- For a richer flavor, consider adding a tablespoon or two of olive oil or melted butter to the dough.
Storage Instructions
- Store leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
