Instructions

  • In a small bowl, combine the warm milk and yeast. Let it stand for about 5-10 minutes until the yeast is foamy. This activates the yeast and ensures a good rise.
  • In a large bowl, whisk together the whole wheat flour, salt, and black pepper.
  • Add the minced garlic, chopped green beans, bell pepper, peas, carrot, and fresh coriander to the dry ingredients. Mix well to combine.
  • Pour in the oil and the yeast mixture. Begin to knead the dough, either with your hands or a stand mixer, until it forms a soft, slightly sticky dough. This should take about 5-7 minutes by hand or 3-5 minutes with a mixer.

  • Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Grease a 9x5 inch loaf pan. Gently punch down the risen dough to release the air. Shape the dough into a loaf and place it in the prepared pan.
  • Cover the loaf pan with plastic wrap and let the dough rise for a second time, for about 20 minutes. Meanwhile, preheat the oven to 350°F (175°C).
  • Sprinkle the top of the loaf with sesame seeds and black seeds.
  • Bake for 20-25 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. A digital thermometer inserted into the center should read 200°F (93°C).

  • Once baked, brush the top of the warm loaf with melted butter for a beautiful glaze. Let the bread cool completely in the pan before slicing and serving. This allows the crumb to set properly.

Recipe Notes

Good To Know

  • For extra crunch and a nutty flavor, sprinkle the top of the loaf with a mix of sesame seeds and pumpkin seeds just before baking.
  • If your veggies have high water content (like bell peppers), pat them dry before adding to the dough to prevent the bread from becoming soggy.
  • For a spicier kick, fold finely chopped green chilies or a pinch of chili flakes into the dough along with the vegetables.

Expert Tips

  • Don't overmix the dough. Overmixing can develop the gluten too much, resulting in a tough loaf.
  • Use a kitchen scale to measure your ingredients for the most accurate results, especially for the flour and yeast.
  • Let the dough rise in a warm, draft-free place. A slightly preheated oven (turned off) works well.

Storage Instructions

  • This bread freezes well: slice after cooling, wrap individual portions, and reheat in a toaster or oven for a quick, nutritious meal anytime.
