  • 50 gm Butter cold, cubed, unsalted

Preheat & Prep

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly dust with flour.

Combine Dry Ingredients

  • In a large bowl, whisk together all-purpose flour, whole wheat flour, baking soda, salt, and sugar.

Cut in Butter

  • Add the cold, cubed butter to the flour mixture. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Herbs

  • Stir in the grated cheddar cheese and dried herbs. Mix until evenly distributed.

Combine Wet and Dry

  • In a separate bowl, whisk together the buttermilk and sugar until the sugar dissolves. Add the wet ingredients to the dry ingredients and stir until just combined. The dough will be shaggy and slightly sticky.

Shape the Dough

  • Turn the dough out onto a lightly floured surface. Gently knead for about 1 minute, or until the dough just comes together. Do not over-knead.

Form and Score

  • Shape the dough into a 6-8 inch round. Transfer it to the prepared baking sheet. Using a sharp knife, score a cross into the top of the bread, cutting about halfway through.

Bake

  • Bake for 20 minutes at 425°F (220°C). Then, reduce the oven temperature to 350°F (180°C) and bake for an additional 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

  • Remove the bread from the oven and let it cool completely on a wire rack before slicing and serving.
