Ingredients
Dough
- 2 cup Whole Wheat Flour whole
- 1.5 tsp Salt or to taste
- 4 large Carrots grated, red or yellow
- 1 tbsp Oil for kneading
Spices
- 1 tsp Chili Powder red
- 1 tbsp Chilies chopped, green
- 2 tsp Mango Powder dry
- 1 tsp Chaat Masala
- 1/4 tsp Garam Masala
For Frying
- 1 tbsp Oil
Instructions
- In a large bowl, combine the whole wheat flour, salt, and grated carrots.
- Add the oil for kneading, red chili powder, chopped green chilies, dry mango powder, chaat masala, and garam masala to the bowl.
- Knead the mixture into a smooth and pliable dough. Adding a little water at a time helps achieve the right consistency. Kneading develops the gluten in the flour, resulting in softer parathas.
- Divide the dough into equal-sized balls.
- Roll each ball into a thin, circular paratha on a lightly floured surface.
- Heat a flat griddle or non-stick pan over medium heat. Add oil to the pan.
- Place a paratha on the hot pan and cook for about a minute per side, or until light golden spots appear. Flipping ensures even cooking.
- Apply a little more oil to the surface of the paratha and flip it again. Cook until golden brown and cooked through.
- Serve the hot Carrot Parathas with yogurt or your favorite pickle.
Recipe Notes
Good To Know
- For added texture and nutrition, mix finely chopped fresh coriander leaves or a handful of grated paneer directly into the dough before rolling out the parathas.
- If your dough becomes too moist from the carrots, dust your work surface and rolling pin generously with dry flour to prevent sticking and help achieve evenly rolled, soft parathas.
- To infuse an extra tang, sprinkle a little chaat masala and a few drops of lemon juice over the hot parathas just before serving, enhancing their flavor and aroma.
Expert Tips
- For a richer flavor, roast the grated carrots lightly in ghee before adding them to the dough. This enhances their sweetness and adds a beautiful depth of flavor.
- Don't overwork the dough. Knead it just until it comes together to avoid tough parathas. Allow the dough to rest for at least 15 minutes before rolling to ensure soft and pliable parathas.
- Cook the parathas over medium heat to ensure they cook through evenly and develop a beautiful golden-brown color. Using a generous amount of ghee or oil will result in crispy and flavorful parathas.
Storage Instructions
- Carrot Parathas freeze well; once cooked, allow them to cool completely, then separate each with parchment paper and store in an airtight container for up to a month. Reheat on a tawa or skillet before serving to restore freshness.
