Ingredients
Dry Ingredients
- 2 cup Wheat Flour whole
- 1 cup Gram Flour besan
- 1.5 tsp Salt or to taste
- 1/4 tsp Turmeric haldi
- 1/4 tsp Carom Seeds ajwain
Wet Ingredients
- 1 cup Fenugreek Leaves chopped, finely, fresh methi leaves
- 1 tbsp Garlic paste
- 2 tbsp Chili Paste adjust to taste, green
- 2 tbsp Water as needed for dough consistency
- 2 tbsp Oil plus extra for cooking
For Serving
- Clarified Butter or your preferred cooking oil
- Yogurt
- Pickle
Instructions
Prepare the Fenugreek Leaves
- Rinse the fenugreek leaves thoroughly and drain completely. Finely chop the leaves and set aside.
Combine Dry Ingredients
- In a large bowl, combine the whole wheat flour, gram flour, salt, turmeric powder, and carom seeds. Mix well.
Make the Dough
- Add the chopped fenugreek leaves, garlic paste, green chili paste, and 2 tablespoons of oil to the dry ingredients. Gradually add water, mixing until a soft, pliable dough forms. Knead the dough thoroughly for about 5-7 minutes until smooth and elastic.
Shape and Roll the Parathas
- Divide the dough into medium-sized balls. Dust a work surface with flour. Roll each ball into a 6-inch circle using a rolling pin.
Cook the Parathas
- Heat a lightly oiled griddle or tawa over medium heat. Cook each paratha for 1-2 minutes per side, or until lightly browned and cooked through. Brush with ghee or oil during cooking for extra flavor and crispness.
