Instructions

Prepare the Fenugreek Leaves

  • Rinse the fenugreek leaves thoroughly and drain completely. Finely chop the leaves and set aside.

Combine Dry Ingredients

  • In a large bowl, combine the whole wheat flour, gram flour, salt, turmeric powder, and carom seeds. Mix well.

Make the Dough

  • Add the chopped fenugreek leaves, garlic paste, green chili paste, and 2 tablespoons of oil to the dry ingredients. Gradually add water, mixing until a soft, pliable dough forms. Knead the dough thoroughly for about 5-7 minutes until smooth and elastic.

Shape and Roll the Parathas

  • Divide the dough into medium-sized balls. Dust a work surface with flour. Roll each ball into a 6-inch circle using a rolling pin.

Cook the Parathas

  • Heat a lightly oiled griddle or tawa over medium heat. Cook each paratha for 1-2 minutes per side, or until lightly browned and cooked through. Brush with ghee or oil during cooking for extra flavor and crispness.

Serve

  • Serve the hot Besan Methi Parathas immediately with yogurt, pickle, or clarified butter (ghee).

Expert Tips for the Perfect Besan Methi Paratha

  • For extra flavor, you can add a pinch of asafoetida (hing) to the dough.
  • If the dough feels too dry, add a tablespoon of milk or yogurt to achieve the desired consistency.
  • Don't overcrowd the pan when cooking the parathas. Cook in batches to ensure even browning.
  • For a crispier paratha, cook it over medium-high heat and use a little more ghee or oil.
