Instructions

Prepare the Dough

  • Combine the whole wheat flour, turmeric powder, chili powder, coriander powder, salt, and chopped fenugreek leaves in a large bowl. Gradually add water while mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic. Add a tablespoon of oil to the dough and continue to knead for another minute. Cover the dough and let it rest for at least 30 minutes.

Roll and Cook the Paratha

  • Divide the dough into equal-sized balls (about lemon-sized). Take one ball at a time and roll it into a thin circle (about 6-8 inches in diameter) using a rolling pin. Lightly brush both sides of the rolled dough with oil.

Shallow Fry the Paratha

  • Heat a flat griddle or large skillet over medium heat. Place the rolled paratha onto the hot griddle and cook for 1-2 minutes per side, or until lightly golden brown. Once cooked, gently flip the paratha and cook the other side until it forms beautiful brown spots and becomes puffed up. Add a small amount of oil around the paratha for extra crispness.

Serve and Enjoy

  • Serve the hot Methi Paratha immediately with your favorite accompaniment such as yogurt, raita, pickle, or chutney.

Recipe Notes

Expert Tips for Perfect Methi Paratha:

  • For extra flaky layers, gently roll the dough very thinly. The thinner the dough, the crispier the paratha.
  • Don't overcrowd the pan when cooking the paratha. Cook in batches to ensure even cooking and browning.
  • If the dough becomes too sticky, add a little more flour, a teaspoon at a time. If too dry, add a few drops of water.
  • For a richer flavor, use ghee instead of oil for cooking.
