  • Combine all the dough ingredients (flours, herbs, spices, and salt) in a large bowl. Gradually add water, mixing until a stiff, yet pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic. Let the dough rest for at least 30 minutes, covered with a damp cloth.

Roll and Cook the Parathas

  • Divide the dough into 9-10 equal-sized balls. Roll each ball into a 6-inch circle using a rolling pin. Heat a lightly oiled griddle or flat pan over medium heat.

Cook the Paratha

  • Place a rolled paratha on the hot griddle. Cook for 1-2 minutes per side, or until light brown spots appear. Now, lightly brush both sides with oil or ghee. Continue to cook, flipping occasionally, until the paratha is golden brown and slightly puffed up.
