Ingredients

- 1 ltr Milk
- 2 tbsp Samak Rice Flour also known as vrat rice flour
- 1/4 cup Sugar adjust to your sweetness preference

- 1/4 tsp Cardamom Powder elaichi

Prepare the Rice Flour Mixture
- Mix 2 tablespoons of Samak rice flour with 1/4 cup of cold milk in a small bowl. Stir until smooth and set aside.
Boil the Milk
- In a heavy-bottomed saucepan, bring 1 liter of milk to a boil over medium heat.
Thicken the Milk
- Reduce the heat to low and let the milk simmer gently, stirring frequently to prevent sticking and burning. Continue simmering until the milk has reduced slightly and thickened.
Add Rice Flour Mixture
- Slowly pour the prepared rice flour mixture into the simmering milk, stirring continuously to avoid lumps. Cook for 2-3 minutes, or until the mixture has thickened slightly.
Incorporate Sweeteners and Spices
- Add 1/4 cup of sugar (or to taste) and 1/4 teaspoon of cardamom powder. Stir well to combine and cook for another minute.
Add Fruits and Nuts
- Gently stir in the chopped mixed fruits, cashews, and raisins. Cook for another minute, allowing the fruits to warm through.
Serve
- Remove from heat and allow the Falahari Kheer to cool completely. Serve chilled for a refreshing treat.
