Instructions

Prepare the Dry Ingredients

  • Sift together the cocoa powder, milk powder, and powdered sugar. Set aside.

Melt the Butter

  • In a double boiler (or a heatproof bowl set over a pan of simmering water), melt the butter until completely smooth.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the melted butter, mixing well until a smooth, thick paste forms. Add 2-3 tablespoons of water, one tablespoon at a time, if needed to reach a spreadable consistency. If adding nuts or dried fruit, stir them in now.

Set the Chocolate

  • Pour the chocolate mixture into a chocolate mold (or line a small baking dish with parchment paper). Refrigerate for at least 30 minutes, or until firm.

Unmold and Enjoy

  • Once set, remove the chocolates from the mold. If using a baking dish, cut into small squares. Enjoy immediately or store in an airtight container in the refrigerator.

Recipe Notes

Expert Tips for Perfect Homemade Chocolates

  • Use high-quality cocoa powder for the richest flavor. Dutch-processed cocoa powder will result in a darker, less acidic chocolate.
  • Don't overheat the butter; it can cause the chocolate to seize up. Use a double boiler or a low heat for gentle melting.
  • For extra-smooth chocolates, you can add a pinch of salt to enhance the flavor profile.
  • Get creative with additions! Experiment with different extracts (vanilla, peppermint), spices (cinnamon, chili powder), or even a splash of liqueur.
