Ingredients
Chocolate & Cream Base
- 100 gm Chocolate Compound dark chocolate compound recommended. could substitute with high-quality dark chocolate.
- 1/2 cup Heavy Cream
- 1 tsp Butter unsalted
Coconut & Binding
- 1/2 cup Coconut Milk full-fat coconut milk preferred for richness.
- 1 tbsp Corn Flour also known as cornstarch. may need slightly more depending on the moisture content of your coconut.
- 1.5 cup Coconut freshly grated coconut is best; avoid pre-sweetened varieties., shredded
Optional Decorations
- 2 tbsp Cocoa Powder unsweetened cocoa powder for dusting.
- Decorative Sprinkles as needed, silver dragees, cocoa nibs, etc.
Instructions
Melt the Chocolate
- Melt the chocolate compound in a double boiler. To create a double boiler, place a heatproof bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water.
Combine the Cream Mixture
- In a separate saucepan, melt the butter over low heat. Add the heavy cream and coconut milk. Simmer gently for 5 minutes, stirring occasionally.
Combine Chocolate and Cream
- Once the chocolate is completely melted and smooth, slowly pour the warm cream mixture into the chocolate, whisking constantly until fully combined and smooth.
Incorporate Coconut and Cornflour
- Add the shredded coconut and cornflour to the chocolate mixture. Stir until thoroughly combined. If the mixture is too runny, add more cornflour, one tablespoon at a time, until you reach a firm but pliable consistency.
Chill and Shape
- Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours, or preferably overnight, to allow it to firm up completely.
Roll into Truffles
- Once chilled, roll the mixture into small, bite-sized balls.
Decorate and Serve
- Roll the truffles in cocoa powder and/or your desired decorative sprinkles. Serve immediately or store in an airtight container in the refrigerator.
