Instructions

Melt the Chocolate

  • Melt the chocolate compound in a double boiler. To create a double boiler, place a heatproof bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water.

Combine the Cream Mixture

  • In a separate saucepan, melt the butter over low heat. Add the heavy cream and coconut milk. Simmer gently for 5 minutes, stirring occasionally.

Combine Chocolate and Cream

  • Once the chocolate is completely melted and smooth, slowly pour the warm cream mixture into the chocolate, whisking constantly until fully combined and smooth.

Incorporate Coconut and Cornflour

  • Add the shredded coconut and cornflour to the chocolate mixture. Stir until thoroughly combined. If the mixture is too runny, add more cornflour, one tablespoon at a time, until you reach a firm but pliable consistency.

Chill and Shape

  • Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours, or preferably overnight, to allow it to firm up completely.

Roll into Truffles

  • Once chilled, roll the mixture into small, bite-sized balls.

Decorate and Serve

  • Roll the truffles in cocoa powder and/or your desired decorative sprinkles. Serve immediately or store in an airtight container in the refrigerator.

Expert Tips

  • Freshly grated coconut adds superior texture and taste compared to pre-shredded.
  • Don't over-mix the truffle mixture after adding the cornflour, as this can make it tough.
  • For extra elegance, melt some high-quality dark chocolate and drizzle it over the finished truffles.
