Ingredients

- 250 gm Cheddar Cheese sharp cheddar recommended
- 50 gm Butter unsalted
- 50 gm Almond Paste
- 50 gm Chocolate melting chocolate is best, white
- 50 gm Sugar powdered
For the Coating & Garnish
- 100 gm Chocolate high-quality dark chocolate recommended, dark
- 2-3 tbsp Chocolate Syrup for drizzling
Instructions
Prepare the Truffle Filling
- Combine cheddar cheese, butter, almond paste, powdered sugar, and white chocolate in a heatproof bowl set over a pan of simmering water (double boiler). Stir constantly until the mixture is smooth and melted.
- Remove from heat and let cool slightly, stirring occasionally to prevent it from setting too firmly.
Shape the Truffles
- Roll small portions of the cheese mixture into balls (about 1 inch in diameter).
- Make a small indentation in the center of each ball.
Create the Chocolate Center
- Melt the dark chocolate according to package directions. Spoon a small amount of melted dark chocolate into the indentation of each cheese ball.
Chill & Garnish
- Place the truffles on a parchment-lined baking sheet and chill in the freezer for at least 15-20 minutes, or until firm.
- Once chilled, drizzle with chocolate syrup for garnish.
