Prepare the Truffle Filling

  • Combine cheddar cheese, butter, almond paste, powdered sugar, and white chocolate in a heatproof bowl set over a pan of simmering water (double boiler). Stir constantly until the mixture is smooth and melted.
  • Remove from heat and let cool slightly, stirring occasionally to prevent it from setting too firmly.

Shape the Truffles

  • Roll small portions of the cheese mixture into balls (about 1 inch in diameter).
  • Make a small indentation in the center of each ball.

Create the Chocolate Center

  • Melt the dark chocolate according to package directions. Spoon a small amount of melted dark chocolate into the indentation of each cheese ball.

Chill & Garnish

  • Place the truffles on a parchment-lined baking sheet and chill in the freezer for at least 15-20 minutes, or until firm.
  • Once chilled, drizzle with chocolate syrup for garnish.
