Ingredients
 

Chocolate

  • 100 gm Chocolate bittersweet or semi-sweet, dark, finely grated
  • 100 gm Chocolate compound chocolate is acceptable, finely grated, white
  • 50 gm Chocolate milk chocolate, or dark chocolate chips; your choice!, semi-sweet chips

Dairy & Other

  • 50 gm Heavy Cream or double cream; full-fat recommended
  • 1 tsp Butter for extra creaminess, room temperature, unsalted
  • Optional Cocoa Powder for dusting

Instructions
 

Prepare the Chocolate

  • Combine the grated dark and white chocolate in a medium bowl.

Melt the Chocolate

  • Microwave the heavy cream on medium-high for 1 minute. Pour the warm cream over the grated chocolate and cover the bowl. Let it sit undisturbed for 2 minutes to allow the chocolate to melt.

Create the Truffle Mixture

  • Gently whisk the mixture until smooth and creamy. If the mixture isn't completely smooth, microwave it in 20-second intervals, whisking between each interval, until smooth. Stir in the room temperature butter until fully incorporated.

Assemble the Truffles

  • Once the mixture is cool enough to handle (but still slightly soft), stir in the chocolate chips. Roll the mixture into small balls (about 1 inch in diameter).

Chill and Serve

  • Refrigerate the truffles for at least 5 minutes to allow them to firm up. Dust with cocoa powder, if desired. Serve and enjoy!
