Prepare the Spice Blend

  • Heat 1/2 teaspoon of oil in a small pan. Add the asafoetida and curry leaves. Fry until the leaves become crisp. Allow to cool completely. Grind the cooled mixture with the powdered sugar, salt, and red chili powder in a spice grinder until a fine powder forms. Set aside.

Roast the Nuts and Raisins

  • Heat the remaining oil in a pan. Add the peanuts and fry for 2-3 seconds. Add the cashews and almonds (if using). Add the raisins and continue to fry until the peanuts are dark brown and the raisins puff up. If you are concerned about the raisins burning, fry them separately. Drain the nuts and raisins on paper towels to remove excess oil. Set aside to cool.

Assemble the Trail Mix

  • In a large bowl or airtight container, layer half of the boondi, half of the roasted nuts and raisins, and half of the spice powder. Repeat the layers with the remaining boondi, nuts, raisins and spice powder. Gently mix everything together with a wooden spatula until well combined.

Store and Serve

  • Store the Kara Boondi in an airtight container at room temperature. Enjoy with tea or coffee!
