- a few Curry Leaves

- 1 tbsp Ginger Paste
- 1 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 1/8 tsp Asafoetida
- 1/4 tsp Cinnamon ground
- 1/2 tsp Chili Powder red
- 1 1/2 tsp Salt or to taste

- 2 Papad standard size
- 1 tbsp Tomato Puree
- 2 tbsp Oil
Instructions
- Rinse the cauliflower florets thoroughly under running water. Briefly blanch the cauliflower in boiling water to eliminate any unseen insects. This also helps to slightly soften the cauliflower before sautéing.
- Fry the papad until crisp and golden brown. Set aside to cool completely. Once cooled, crush the papad into smaller pieces.
- Heat the oil in a frying pan or skillet over medium heat. Add the cauliflower florets and sauté for a few minutes until they begin to soften and turn lightly golden.
- Add the curry leaves, ginger paste, asafoetida, tomato puree, turmeric powder, cumin seeds, ground cinnamon, red chili powder, and salt to the pan. Stir well to combine all the spices with the cauliflower.
- Sprinkle 2 tablespoons of water over the cauliflower and spices. This helps to create a light sauce and ensures the spices are evenly distributed. Continue to cook until the cauliflower is tender-crisp and the flavors have melded together.
- To serve, transfer the cauliflower to a serving dish and garnish with the crushed papad. The crispy papad adds a wonderful textural contrast to the tender cauliflower.
