Sprouted Moong

  • 1 cup dry Mung Bean moong dal, or overnight. drain and sprout according to package instructions or until sprouts are 1/4-inch long., rinse thoroughly and soak in plenty of water for at least 8 hours, split, yellow

Prepare the Sprouted Moong

  • Wash and soak the moong dal overnight. Drain and sprout until tiny sprouts appear. Coarsely grind the sprouted moong using a little water to create a paste.

Prepare the Vegetable Mixture

  • In a blender, combine the chopped carrots, green chilies, ginger, and coriander. Blend to a smooth paste.

Combine and Prepare the Batter

  • In a large bowl, combine the sprouted moong paste and the vegetable paste. Add the buttermilk, flour, salt, cumin powder, and baking soda. Mix well to create a smooth batter. Let the batter rest for 10-15 minutes.

Steam the Dhokla

  • Grease a dhokla steamer or baking dish with oil. Pour the batter into the prepared dish. Steam for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Tempering

  • Heat the oil in a small pan. Add the mustard seeds, sesame seeds, and curry leaves. Once the mustard seeds splutter, pour the tempering over the steamed dhokla.

Serve

  • Let the dhokla cool slightly before cutting into squares. Serve warm or at room temperature.
