Instructions

Prepare the Tikkis

  • Mash the boiled potatoes lightly. Add salt, red chili powder, minced ginger, chopped green chilies, and cilantro. Mix well. Add breadcrumbs and mix thoroughly to form a dough.
  • Roll the dough into small balls, then flatten them slightly to form tikkis.
  • Heat oil in a pan over medium heat. Shallow fry the tikkis until they are golden brown and crispy.

Prepare the Cholle (Chickpea Curry)

  • In a pan, heat oil and sauté chopped onions and tomatoes until softened. Add coriander powder, and red chili powder, and cook for a minute.
  • Add the cooked cholle (chickpeas) and cook for 5 minutes, stirring occasionally. Stir in garam masala, chaat masala, and raw mango powder. Adjust salt to taste.

Assemble and Serve

  • Place a tikki on a plate. Top with chopped tomato and onion. Drizzle with yogurt and tamarind chutney. Sprinkle chaat masala on top. Serve immediately.

Recipe Notes

Expert Tips for the Best Tikki Cholle:

  • For extra crispy tikkis, ensure the potatoes are well-mashed and the mixture isn't too wet. Add a little extra breadcrumbs if needed.
  • Soaking the chickpeas overnight significantly reduces cooking time and improves their texture. Pressure cooking ensures they're tender and fluffy.
  • Don't overcrowd the pan when frying the tikkis; fry them in batches to ensure even browning and crispiness.
  • Feel free to customize the spice level to your preference. Adjust the amount of red chili powder and green chilies accordingly.
