Ingredients
For the Kadhi
- 1 litre Lassi
- 2 Tbsp Gram Flour besan
- 1/2 tsp Turmeric haldi, powder
- 1 tsp Chili Powder red
- 2 tsp Salt or to taste
- 2 Chili dried, red
- 1 tsp Fenugreek Leaves dried, kasuri methi
For the Pakoda
- 2 medium Onion chopped
- 2 Chili chopped, green
- 1/2 cup Gram Flour besan
- 1/4 tsp Chili Powder red
- 1/4 tsp Salt or to taste
- 1/4 tsp Cumin jeera, seeds
- 3 Tbsp Water
- 4 cup Oil for frying
For the Tadka (Tempering)
- 2 Tbsp Oil
- 3 clove Garlic chopped
- 2 medium Onion chopped
- 1 Tbsp Ginger chopped
- 2 Chili chopped, green
- 1/4 tsp Cumin seeds
- 1/4 tsp Mustard Seeds
- 2 Chili dried, red
- 1/4 tsp Asafoetida hing
For the Rice
- 1 cup Basmati Rice
- 3 cup Water
- 1/4 tsp Salt or to taste
Instructions
- In a large pan, combine the lassi, gram flour, turmeric powder, red chili powder, salt, and dried red chilies. Blend thoroughly using a hand blender until smooth.
- Heat oil in a heavy-bottomed wok or pot. Add chopped garlic and sauté until light brown. This infuses the oil with garlic flavor.
- Add chopped onions, ginger, and green chilies to the wok. Sauté for 5-6 minutes until the onions soften and turn translucent.
- Add cumin seeds, mustard seeds, and dried red chilies to the tempering. Stir well. The spices will sizzle and release their aroma.
- Pour the blended lassi mixture into the wok and mix well. Bring the mixture to a boil, then reduce heat to low and simmer for 25 minutes, stirring occasionally. Simmering allows the flavors to meld and the kadhi to thicken.
- Stir in the asafoetida powder.
- In a bowl, combine chopped onions, green chilies, salt, red chili powder, dried fenugreek leaves, gram flour, cumin seeds, and water. Mix well to form a thick pakoda batter.
- Heat oil in a deep pan or kadai for frying. Drop spoonfuls of the pakoda batter into the hot oil. Fry until golden brown and crispy, turning occasionally for even cooking.
- Gently add the fried pakodas to the simmering kadhi. Allow them to soak in the flavorful sauce for a few minutes.
- In a separate pot, bring 3 cups of water to a boil. Add salt and the rinsed basmati rice. Reduce heat to low, cover, and cook for about 15-18 minutes, or until the rice is cooked through and fluffy.
- Serve the hot Kadhi Pakoda over the fluffy boiled rice. Garnish with extra dried fenugreek leaves or chopped coriander leaves, if desired.
